duck & wild rice casserole

3/4 cup wild rice (real stuff do not cheat)
1 or 2 ducks/geese
1 diced red onion
2 cloves garlic
12-16 ox 30-40 size raw shrimp peeled & de veined (1 duck 16 oz 2 duck `12 oz of shrimp)
1 lg Tbsp rosemary flakes
1 heaping tablespoon thyme
1 tsp white pepper
1 1/4 cup grated parmesan cheese
1 cup shredded mozzarella cheese


Cook wild rice, 4 cups water to 1 cup wild rice . simmer for an hour.
Debone meat from Duck and dice into 3/4" cubes. Saute the shrimp, onions and garlic and duck. Mix the sauted items with the cooled rice, parmesan,thyme,pepper and rosemary. Add 8 ounces of white wine. Mix well and place in a buttered casserole or baking dish. Bake covered at 350 degrees for 45 minutes.

Uncover, sprinkle with mozzarella cheese and broil til crusted.

Sounds delicious. If you can't eat shrimp sub a little Andouille sausage.
