Walter, why do brown eggs taste better than white ones? This is not a dirty joke. They really do. The taste seems "fuller." Why is it, oh, Sage of the Age?

Brown eggs come from hens with red or brown feathers such Rhode Island Reds. White eggs come from hens with white feathers, such as Leghorns.

Folks that raise brown egg chickens tend to let them free range or run in a chicken yard.
It's the different sources of food, bugs, small frogs adn seeds, that give the eggs a richer flavor.

psssst! (whisper) Hb, their pulling your leg. Some chickens lay white eggs, some lay brown eggs, and some lay [really] green eggs. It has to do with the genes for egg color not the genes for feather color, or having the chickenshit on the inside or outside. RI reds and Barred Rocks do lay brown eggs but there are plenty of colored chickens that lay white eggs and there are some white chickens that lay offwhite or colored eggs.

It has to do with the genes of the hen.

Yard eggs and fertilized eggs do taste different . That has to do with what the chicken eats. You can put a RI Red in a laying crate and feed it laying mash and produce a totally tasteless brown egg. Let that hen make a living out in the garden and she will produce some wonderful tasting eggs of the richest nutrient value you have ever had.

Keeping a rooster handy is another story. They tend to give themselves away if you live in a "coded" area.
