Agreed, Tom. Perhaps brushing the venison with oil will provide a similar effect. I can get suet from local butcher, perhaps even caul fat, so there are some possibilities. Someone suggested alternating the venison with cubes of pork, so that's an idea, too

I like wrapping venison chunks in bacon strips to grill, always sells out in minutes.
