a pot of beans - no - really, not politics Login/Join

I smoked some chops yesterday, 2 to 3 bone thick, and we had then for dinner with a caesar salad (with real anchovy paste) and bakers ...

then put left overs in the pot, with a selection of beans (navy, great northern, and lima) with beef and chicken broth, a HEAPING PILE of jar-lic, some pollo assado seasoning, and a "racket ball" sized shallot - let sit and soak overnight

first thing this morning, i topped up the pot with more water, and let start simmering --

good lord, these are smooth, velvety, and a good thick broth ...

oh, the horror

then some butter milk cornbread (yes, mine is done in the middle)

ps- didn't have a jalapeno or cilantro handy

note to Tejanos - yes, these are fiesta beans without a GIANT yellow onion floating in them

Would have chosen straight pintos from Colorado for my beans but other than that she’s cherry!

I make a very basic succotash and do use frozen baby lima's and frozen corn. I grow the garlic and onions. Store bought bacon.
