Was that a real puffadder or the puffadder as in the "african hunters cook book?"

In the book it has a recipie for a puff adder but it is made from liver and other stuff.

Common Reedbuck living in Sourveld Grassland. Southern Natal and East Griqualand.
Rib Eye or Biltong. Nothing comes close for texture, flavour and versatility.

Biltong of any sort is hard to beat I think, especially kudu, although warthog is not bad either! As for fresh, I think buffalo or eland steaks are awesome! I agree that the way a lot of game is prepared and the age of the animal, etc has a lot to do with the taste. A slow-cooked spit-braai with a good marinade injected at regular intervals throughout is always a winner, especially for warthog. Even conventionally braaied chops or steaks always seems to taste that much better to me than any other cooking style. Croc was quite nice, although a bit rich and over-smothered in sauce. Sometimes game that has been roasted can turn out being a bit dry, tough and gamey, but I think that has had a lot to do again with age, preparation and cooking times, etc.

As for other foods, ishwa or harvester termite flying ants fried up in butter are actually very tasty, although a bit crunchy! They taste a bit like pork crackling, but they are not for everyone, I suppose, better to try them whilst blind-folded. Fresh self-caught fish, especially bream fillets in a good batter fried up are also tops for me.

Of the ones I've eaten, which include Kudu, Oryx, Eland, Zebra, Impala, Ostrich, Warthog, Springbok, and probably some others I've forgotten, I'd say that Kudu, Oryx and Zebra were by far the best, depending on presentation, of course. If I had to choose one, it would probably be oryx but it would be a very close call. Contrary to what many seem to think, I've had Eland quite a few times, I find it to be bland and relatively unappealing. It is my opinion that people who prefer eland really don't like game meat very much. Since we eat whitetail venison 52 weeks a year on my ranch, I don't fit that category.

Most all of the PG I've eaten was very good; Nyala loins on the braai (sp?), bushbuck, Springbok, etc., but the king of all I've eaten was the Bontebok, hands down. No wonder they were nearly extinct in the past. Fabulous flavor, texture and tender.

Folks

I'll vote again for fresh Tommy chops followed by leopard tenderloin and Western hartebeest all grilled over an open fire. Oh! My! Gourmet. Of course hippo, lion, zebra and all the rest are fine eating also. Puff adder on the other hand as an appetizer is not good.

I'll put Bontebok up against any red meat in Africa, and most of the antelope's, birds, fish and all that are good if the cook is experienced and no field or cooking problems are encountered. I dare say few US hunters have had the pleasure of eating Bontebok but until you do....

I've not eaten bontebok, but I have enjoyed eating blesbok filets over the years. They were excellent, but I can't imagine that there is any difference in the taste of two races of the same species.

It would be like saying Chobe bushbuck meat tastes better than an identical cut from a Limpopo bushbuck.

My vote stays with backstrap of eland.

Bill, I've eaten Blesbok many times and in a variety of dishes. It is outstanding venison. However, the first two times I ate Bontebok it was grilled fillets over mopane coals cooked medium rare, the third it was a roast. Similar to some of the finer cuts of African Antelope but I still rank it at the top. It had zero gamey flavor, even slight. I used a chutney with the roast. Absolutely any gourmet game recipe depends upon the field care and the chef, although if hungry enough and ample quantities of liquor is consumed, I believe a satisfying meal could be made from Civit Big Grin

I know without a doubt what the best African dish is,,now L. David Keith is hard to argue with on his recommnedation, and most have had great suggestions,,however,,, the best game recipe is the "Next" one and I will have to wait 19 more days to have it! Just counting the days and repacking over and over...I can almost smell the meat over the mopane wood as I close my eyes and day dream..

Theodore Roosevelt spent considerable time in Africa and had the opportunity to eat a wide variety of African game animals. Yet you need look no further than chapter VIII of his "Outdoor Pastimes of an American Hunter" to learn what he considered the finest tasting game animal.
