What is your favorite way to prepare partridge "for the table"?

Do you "age" birds before you prepare them?

I'd love to construct a Parilla. For now I just use a Weber grill.

Partriges have the best game meat i ever tasted ,i cook them with olive oil and a bit of specie ,we eat with corn potatoes and a good wine .

I'm envious, off season up here!! I'm curious about the dog in the bed of the truck. The markings are alot like my setter, not the hair though.

Martin this is my partrige shotgun ,its a REMINGTON EUROPE OU its constructed by Bernardelli in Italy for Remington a great shotgun ,i love it.

what is the breed of the dog in the back of the truck? He looks like a beagle.
