Every night in camp, while having a sundowner around the fire, the staff brings an appetizer. While you usually can't wrestle a liver from the trackers, this year they had a grilled buffalo liver appetizer with carmelized onions. It was fantastic.

In the hunting camp, fresh liver features regularly as a brunch, lots of butter, caramalized onions, lots of black pepper, a hint of chili and a dash of cream, served on toast. Nothing beats fresh liver!

With all those seasonings, how can you taste the liver?? Any meat that needs all that might as well be boot sole….

When I do regular calf liver, I just dust it in cornmeal + fry it along with the onion slices in canola oil.

Nope. Liver is the body’s garbage filter, just like the kidney. Their sole purpose is to clean the blood of toxins and waste products like dead red blood cells and muscle breakdown products.

Yum. I enjoy liver. Most people overcook it. I think my favorite is rabbit followed by turkey, chicken, sheep, pork, beef, game.

I love liverwurst (brawnschweiger), + used to always order fried chicken livers at the restaurant. Anyone else heard the old rumor (maybe true) about not eating bear liver, due to their fish intake + thus a high mercury count?

I ate enough liver when I was in South America. That was more than 30 years ago. I have not eaten it since then.

Organs were not made to be eaten!

My only real experience is in beef. Calf nuts fresh cut, rolled in corn meal + Salt + pepper + deep fried are to die for. Also calf liver + onions when cooked just so are a true feast. The cook ALWAYS makes the difference.
