I never lived or worked (more than a few weeks) in Louisiana, but love their food and music.

When they were catching crawfish, the roads were lined with cars, people had there little screen mesh traps out in the flooded bar-ditches with chicken guts in the middle. In the good old days Clayton Williams used to fly plane loads of crawfish, boudin, gumbo, cajun bands, and all the accoutrements to West Texas to celebrate a really good well. Talk about a party!

Back on the subject, I would love to go to Mansura and have some of that Cochon de Lait and cold beer.
