I never lived or worked (more than a few weeks) in Louisiana, but love their food and music.
When they were catching crawfish, the roads were lined with cars, people had there little screen mesh traps out in the flooded bar-ditches with chicken guts in the middle. They would move from trap to trap picking up crawfish and dropping them in a #3 wash tub. Crawfish everywhere.

Back on the subject, I would love to go to Mansura and have some of that Cochon de Lait and cold beer.
