Making a half batch o' this to go with the tri-tip that has been soaking low and slow with a dose of smoke on the gasser. Used the coffee/chocolate/pepper rub again. It's about ready to wrap in a towel and take an hour snooze in the cooler. I may need to run down to Lowe's for some longnecks of Lone Star to go with this mess, as it just seems ... "right." After action report: This was a wonderful combination. That potato salad is a fresh and innovative approach to the old standard and well worth trying. It will be one of two rotating spud salad recipes at Bill's house from here on out. Went great with the tri-tip and the Lone Star.
