Hi snowmaker -
[Smile] This is one of my favorite hunting/fishing snacks. I have found that the one most important thing is to Marinate for 8-24 hours. I would try to go for at least 16 hours [Wink] . I would like to see you cut strips rather than "crunchitallup".
Place in your RONKO dehydrator . Dehydrate till jerky is tough/crisp. Time varies based on method of dehydration so use your best judgement (16-36 hours). Add extra Tabasco for more spicy flavor.
Mix all ingredients together in a marinade dish. Mix together and add strips of turkey into marinade
Here are some basic ingredients to start with.
1 pound turkey meat ( I like it sliced thin )
2 tbsp. liquid smoke
1-1/2 tsp. hickory seasoning liquid
3 tbsp. Mustard ( I like brown but yellow works )
2 tbsp. soy sauce
15 dashes Tabasco sauce
1/3 cup Worcestershire sauce
1 tbsp. onion salt and 1 tsp. Garlic salt ( mix these together before adding )

Good eating you lucky dog [Smile]

That's a good recipe. I would add a touch of brown sugar and pickling spice to suit my taste.
