has anyone ever made turkey jerkey from a wild turkey,I will be useing a dehydrater(RONKO)I must say it does the job,I thought that it might be better to grind the whole bird up and use one of those jerkey shooters to keep the sizes the same,open to sugestions or recipies that someone has tryed before.thanks in advance | ||

Hi snowmaker - This is one of my favorite hunting/fishing snacks. I have found that the one most important thing is to Marinate for 8-24 hours. I would try to go for at least 16 hours . I would like to see you cut strips rather than "crunchitallup". Place in your RONKO dehydrator . Dehydrate till jerky is tough/crisp. Time varies based on method of dehydration so use your best judgement (16-36 hours). Add extra Tabasco for more spicy flavor. Mix all ingredients together in a marinade dish. Mix together and add strips of turkey into marinade Here are some basic ingredients to start with. 1 pound turkey meat ( I like it sliced thin ) 2 tbsp. liquid smoke 1-1/2 tsp. hickory seasoning liquid 3 tbsp. Mustard ( I like brown but yellow works ) 2 tbsp. soy sauce 15 dashes Tabasco sauce 1/3 cup Worcestershire sauce 1 tbsp. onion salt and 1 tsp. That's a good recipe. I would add a touch of brown sugar and pickling spice to suit my taste. | |||
