Find yourself a cheap source for bacon.Ends and pieces are generally the cheapest.Use the bacon for your fat content.It also gives a nice smoked flavor at the same time. I used to make a great cajun sausage using equal parts bacon,beef and pork.As far as spices I generally buy them premixed.It works out cheaper in the long run because they can buy bulk.And there aint all the sneazing that goes along with mixing your own.
