Do I remember that the Alaska type trichinosis is NOT killed by freezing ?? Other types are killed. | |||

Nothing to do with Alaska and everything to do with black bear regardless of geographical location but you are correct that freezing will not kill it like it will in pork. Only heat will. | |||

Pigs/Pork have it also, few of us have given it up due to the danger getting Trichinosis....it's all in the temperature you cook it at, at 144 degrees F it kills it instantly, at 130 degrees F it takes 30 minutes to kill the Trichinae. According to another test done by AK F&G a greater percentage lynx meat has trichinosis than bear meat. both are well worth the extra cooking time.
