is it ok to steal from your son inlaw if he calls you gleefully to tell you about the 94 winchester made in 1941 and looking like it just came out of the box?? especially when he tells you he paid 500 for it

Yes it is fine; it is not stealing if the seller is stupid. It is called a purchase wherein the buyer paid the seller's price.
Justified in that, taken to a dealer's shop, he would get 50% of retail for it on a good day. So, in reality, it is overpriced at 500.

Depends on what kind of relationship you want to have with your SIL (and possibly daughter) when he finds out he got hosed. Even thought you paid asking price.
