What is the best way,IYO to sharpen a knife
at home and in the field?

Knife is stainless.

dmt has this sharpener that is for ski's and snowboards but the fine one is an awesome backpacking stone...i have used it snowshoeing in the back country where every ounce matters

the bench stone in fine grit is what i use for the kitchen.

either the mini or the 4" will be great but i love the mini for its function to weight ratio.

I have a DMT diafold double sided sharpener (fine / extra fine) which I carry everywhere ...

I have an old Eze-Lap diamond rod that does most of my sharpening .A quick touch up on any steel is all I need . Works fine on anything even S30V !! I never waste time polishing the edge I just want a fine micro serration .
