These two are an Old Western having curve back buffalo horn bolster under the cherry burl scales on 1095 blade in edge stamped sheath and the Bushcraft hunter with oak scales on the scandi ground 1075 blade in plain sheath.

A Light Hunter away today. It has curve backed buffalo horn bolsters and camel bone scales over black G10 liners on the 1084 HC blade in edge stamped sheath.

Away to Italy are this Light Hunter with Gabon Ebony over brass bolster with engraved initials on 1084 blade in closed top sheath with stamped initials and a skinner with Eucalyptus over brass bolster on 1084 blade in deep pouch sheath.

This pair away to Texas. A JT Ranger with yellow cedar burl over curve backed buffalo horn on the 1075 blade in a cross draw sheath with edge stamping and the customer initials.. The second one is a Safari knife with spalted maple burl also over curve backed buffalo horn bolster on the 1095 blade in a closed top sheath also with edge stamping and customer initials.

Some for him and some for her so happy household in Texas when they arrive..
For him, a mini Bull nose skinner with Desert Ironwood on the 1084 blade in an edge stamped (left hand) cross draw sheath.
An EDC with a snake knot lanyard in the buffalo horn scales on a 1084 HC blade in a 10 degree horizontal (left hand) sheath.
And a K tip paring knife with Chittim handles on the cryo quenched NitroV SS blade.

And for the lady of the home, a kitchen set all in NitroV SS with Spilled milk acrylic handles, with the set comprising a 4 inch paring knife, 5 inch general purpose knife, 5 1/2 inch chef, a 7 inch chef, a Nakiri and a Bearded chef.

Knife number 1000 is finished with the engraving done and is now available.
Braai/Barbeque knife with 9 inch stainless damascus blade, coper pinned bronze bolsters on partial tang, bronze and G10 spacers and a beautiful Chittim burl handle. Stamped tan leather sheath/blade cover and presented in soft leather case.

Garry,

You've made a couple of knives for me and I loved both of them. I like the kitchen knives from your September picture, but have a question. Could you either rock that Bearded Chef a little or add an Ulu to the set? I like a curved blade to chop and dice. I think rocking the Bearded Chef might be the easiest, but welcome your thoughts.

Regardless, what are handle material choices, costs of the set, etc.? I'd be interested in two sets.

Sorry or the delay, I havent been on the forum for a while.
It is easy enough to add the curve to a bearded chef although I have done a couple of ulu's as well. Are you meaning a kitchen knife set and if so are you meaning the 3 piece K tip set plus a rocking bearded chef. I have been doing number of these kicthen knives with a "spilled milk" acrylic handle like the septenmber set but there are other acryilics available.

Thank you, I have forged a few blades but the vast majority of my knives are cut from sheet or bar steel as the damascus making and forging takes much more time and my order book would have a multi years backlog and with the mono steel I can guarantee the steel quality to my customers. 1084 is mainstay for much of my 1/8 inch bladed hunters, 3/16 in 1075 for the larger heavier use knives and 3/32 1095 for the finer cutters and any carbon steel kitchen knives. I do use some O1 on request for specific knives. I cryo quench the NitroV stainless for kitchen knives for the added toughness to this excellent steel.

Haven't looked in on the knife page for a while so missed your knife #1000. You've made some beautiful knives since getting into the business but I think #1000 is a fantastic tribute to your skills and attention to detail to mark the milestone with, congratulations and looking forward to what you will produce for #2000 tu2

Not made it down closer to your neck of the woods yet but still work in progress, albeit slow.

Been a few since #1000 but hadn't been posting here since then. There is a new professional chef knife in the stable with some good reports on them.


I rode up as far as Murchison last week to deliver a dozen knives to friend who has transfered her shop from here to there.

A Mini Skiner away to a NZ customer to be forwarded on to a family member in Czechia so that is another country added to those where my knives have found new homes. maple burl with a little spalting over the CB Buffalo horn bolster and in an open top sheath. Initials on the sheath and name engraved on the blade.

An EDC with aged giraffe bone over curve buffalo horn with stainless and black G10 spacers on the x pattern stainless damascus. A snake knot lanyard with silver rings and white bead will assist in retrieval from the edge stamped deep pouch sheath.

Some knives for a local customer with the handles from an old Totora verandah post he had. I cut, oven dried, and stabilised them for a handle that is not effected by varying atmospheric conditions with all having brass bolsters. There is a pair of 9 inch pro chefs, a pair of 8 inch filleters, a pig sticker, Tahr hunter and a Chamois knife. The pig sticker is in a deep pouch sheath with the Tahr and Chamois knife in horrizontal closed top sheaths.

More ready to go with a General purpose kitchen and pairing knife in NitroV with spilled acrylic as a gift for a friend.
An EDC with curly eucalyptus over 1084 blade in stamped sheath with attached honing steel. The customer wanted my name engraved with the NuZ being the Czech way of spelling knives and with the N and Z being capitalised reinforcing its NZ made origin.
And for a repeat customer an Euro kitchen set in NitroV and a General purpose Field knife in 1084 HC, all with Totora over brass.

A Wapiti Hunter for a very big man so had to make the handle a 1/2 in longer than normal to suit his hands. A nice set of spalted Hackberry scales with snake knot lanyard over curve backed buffalo horn bolster on the 3/16 1075 blade and carried in a closed top sheath.
