Garry, You've made a couple of knives for me and I loved both of them. I like the kitchen knives from your September picture, but have a question. Could you either rock that Bearded Chef a little or add an Ulu to the set? I like a curved blade to chop and dice. I think rocking the Bearded Chef might be the easiest, but welcome your thoughts. Regardless, what are handle material choices, costs of the set, etc.? I'd be interested in two sets. | |||

Sorry or the delay, I havent been on the forum for a while. It is easy enough to add the curve to a bearded chef although I have done a couple of ulu's as well. Are you meaning a kitchen knife set and if so are you meaning the 3 piece K tip set plus a rocking bearded chef. I have been doing number of these kicthen knives with a "spilled milk" acrylic handle like the septenmber set but there are other acryilics available. | |||

Thank you, I have forged a few blades but the vast majority of my knives are cut from sheet or bar steel as the damascus making and forging takes much more time and my order book would have a multi years backlog and with the mono steel I can guarantee the steel quality to my customers. 1084 is mainstay for much of my 1/8 inch bladed hunters, 3/16 in 1075 for the larger heavier use knives and 3/32 1095 for the finer cutters and any carbon steel kitchen knives. I do use some O1 on request for specific knives. I cryo quench the NitroV stainless for kitchen knives for the added toughness to this excellent steel. | |||

Been a few since #1000 but hadn't been posting here since then. There is a new professional chef knife in the stable with some good reports on them. I rode up as far as Murchison last week to deliver a dozen knives to friend who has transfered her shop from here to there. | |||

Some knives for a local customer with the handles from an old Totora verandah post he had. I cut, oven dried, and stabilised them for a handle that is not effected by varying atmospheric conditions with all having brass bolsters. There is a pair of 9 inch pro chefs, a pair of 8 inch filleters, a pig sticker, Tahr hunter and a Chamois knife. The pig sticker is in a deep pouch sheath with the Tahr and Chamois knife in horrizontal closed top sheaths. | |||

The Wapiti Hunter with Tasmanian Backwood over curve backed brass bolters on the 5 inch 1075 HC blade in a closed top sheath was a rush order for a birthday gift this sunday. A new addition to the pattern board is the #2 Bushcraft knife. It has a Koa handle on the 1075 blade with heavy jimping and a lanyard in the closed top sheath. The original Bushcraft Hunter I offered has a 3 3/4 in x 1 inch blade with full scandi grind where the #2 Bushcraft knife has a 4 3/4 x 1 1/4 inch blade with a low saber grind and short secondary bevel. | |||

This lot away to Indiana in the US was a pleasure to do with the request for all handles to be different woods and for all sheaths to have attached honing steels. First there were 2 skining knives with one having hornbeam over CB brass bolster and the other having dyed Karelian Birch over the CB brass bolster. Next pair with the new design #2 Bushcraft with one having Hickory burl over CB Buffalo horn bolster and the other havingTasmanian blackwood over the CB Buffalo horn bolster. The 7 Professional Hunter EDC's all have the CB Buffalo horn bolsters and from the left there is spalted Hackberry, Buckeye burl, Walnut, Amboyna, Chittim, Red Cedar burl, and Maple burl. | |||
