Found these 3 Ringneck males hanging out near my house the other day. They are on their way migrating back up north to their breeding grounds !!! Also known as "Black Jacks" !!! Head shape of this species is just so amazingly beautiful !!! Amazing how they can lift themselves up on water like that !!! | ||

For some reason hundreds of them winter on a couple of ponds I have on my place. They are mostly gone now, heading back North. They started leaving a couple of weeks back, more or less. Really a pretty little duck. I won't normally shoot one but my newly created duck hunting son is not so picky. xxxxxxxxxx When considering US based operations of guides/outfitters, check and see if they are NRA members. Used to get a lot of them off the bigger lakes in Eastern Colorado. Neat bird and pretty decent tablefare too. | |||

Fun diver to hunt.....have one single pond that seems to attract them every year.....amazing how selective they are because there's nothing special about that particular pond. As far as eating, I haven't found them palatable in the least. | |||

They are high speed jets, often falling from high altitude. I've shot quite of few of them out here, they have to be VERY mature to show that distinct of a neck-ring, most of the full-drakes I've shot have a very faint ring ... the female also looks very similar to a hen redhead ... Craig, I have no idea what they feed on in CA but here in TN they are excellent on the table. Mostly feeding on green water vegetation, corn, milo and other grains. I find no difference in their flavor from Mallards. They are common in middle TN although not in large groups, but in west TN (Kentucky/Barkley lakes westward) they occur in large flocks and are quite common. Good argument going on here....Mallards who have been feeding on tiny organisms in a saltwater marsh taste about as good as Coots...on the other hand Corn-fed Mallards out of Mississippi flyway give beef a stiff competition. | |||

I'm going to try Coot one day. Been saying that for a long time, but I have got to give them a try. Here they feed in the same grain field potholes as all other ducks. On open water, they stay in the milfoil beds. Will Coots eat dead shad, I'm sure they will, but so will a Mallard as they are feeders of opportunity and I've seen them dive (yes, and stay under 20 seconds) in the milfoil when it was frigid temps and the potholes were frozen. I've always heard many jokes about eating Coots, but supposedly, the Cajuns are fond of them. Having mounted a few for past clients, their flesh appears no different that other waterfowl. I always found ring necks pretty good table fare. Seems like some others don't. I always breasted them out and marinated the breasts in zesty Italian dressing and then gooked them on the grill. Always came out good. Thats kind of the way I cook things that are naturally a little strong tasting. It gives the meat a good flavor and marinating it makes it tender. | |||

@LDK May be we need input from a Cajun here to clear things up...my understanding was that they use the Coot gizzard for Pool-du (sp??) and not the Coot meat. | |||

I confess I've only tried them twice, they weren't particularly good either time; now, I'm not talking Goldeneye-bad, but certainly no mallard or pintail, etc ... Funny, I've also heard about rank-tasting mallards from eating fish, snails, etc, and that a grainfed spoony is a good eater, and I don't doubt the truth in those statements. In fact I've watched mallards eat fish a few times ... Anecdotally though, I've yet to eat a bad mallard or a good spoony, ringneck, etc ... I've also talked to those who don't like wood ducks either, while I find them to be one of the really good eaters, at least those I've shot out here ... Poule d'eau (water chicken) is cajun french for a coot. They use if mostly for gumbo but there are recipes which call for actually cooking them for the table. I've had them in gumbo, but not otherwise. Personally I wouldn't go out of my way to shoot one. Found the recipe for Poul d'eau Gumbo. Here it goes. POULE D'EAU GUMBO Categories: Stews, Creole Yield: 1 Servings ROUX 3 tb Shortening 1 lg Onion 2 tb Flour 2 Toes garlic 1 Bay leaf 1 pn Thyme Parsley to taste Salt and pepper to taste GUMBO 2 to 3 Poules d'eau Shortening for sauteing 2 Dozen oysters with water 4 c Water File powder Cooked rice Add flour to shortening. Cook over low heat. Stir constantly, to avoid scorching, until very brown. Add onions, garlic, bay leaf, thyme, parsley, salt and pepper. Skin poule d'eau, wash, cut up, salt and pepper. Fry lightly and set aside. Make basic roux, add poule d'eau and water. Simmer for about two hours or until tender. Add oysters and oyster water (be sure and pick over them by hand for pearls and bits of shell, and strain the water.) Add file individually when ready to serve. Serve over rice. Note: do not add file to a rapidly boiling pot or it will string (file means thread). If you wish to season the entire pot, bring the temperature down to a bare simmer, remove some liquid, let it cooland stir in the file; then stir the mixture back into the pot. Do not bring it to a rolling boil again. | |||

I shot my first Ringneck in Washington in January. He is at the taxidermist now. i never even new much about them or realized how nice a bird they were till i got one. | |||

Locally, we call them "Jack's" or "Black Jack's." I have no idea where that name came from but they decoy readily to both mallard and diver calls.
