anyone know where i can find a taxidermist to make a fiberglass reproduction of a 5# brown trout. My girlfriend caught it last summer, but cleaned it for the table and I'd like to surprise her with a mount she could put on the wall.

Any taxidermist who does fish work could undertake this job. The fiberglass blanks are readily available for purchase. These blanks come in every size, shape and specimen to fill your needs. Good pictures from the fish when caught are an asset to use for reference when painting the blank. Just like anything else do a little shopping and look at the reproduction work that the prospective taxidermists have done.

Here are a few of the top in this field that come to mind:
New Wave Taxidermy
Fish Creations
Angler's Art

There are many more who specialize in this field. Go online and type in taxidermy reproduction fish.
