I have a salmon mounted that has developed dark honey colored stains on its head, they are sticky and smell fishy if sniffed up close. I assume this is 'fish grease' that has bled out over the years. Is there a product to remove this and seal the mount better so this ceases to recur?

Salmon do that heavy metal. Thats one of the reasons why most shops went to an artifiacial head. You can take it in and a taxidermist can touch it up and it will probably occur again years down the road. A lesson in irony The Food Stamp Program, administered by the U.S. Department of Agriculture, is proud to be distributing this year the greatest amount of free Meals and Food Stamps ever, to 46 million people. Meanwhile, the National Park Service, administered by the U.S. Department of the Interior, asks us... "Please Do Not Feed the Animals." Their stated reason for the policy is because "The animals will grow dependent on handouts and will not learn to take care of themselves." Thus ends today's lesson in irony.

Salmon heads do that if they are not perpared correctly. That takes alot of time, most shops went to Artificial heads because it's easier and less time consuming. They don't look as good as the real head And to answer your question, no, there is nothing you can do with the greasy head, to repair it would just fix it for a very short time, a waste of your money, unforturely you need to have a artifical head put on at this point.
