...is there some minor change in shoulder angle or sumptin else; i.e., can simply run a .338 or .358 expnader ball into the neck?

No difference other than hole diameter. Just run through 338 or 358 sizer die.

The 338 Fedral may be a little different than the old .338-08 wildcat. That said you should be able to make both out of .308 brass as well as the .358 Win.
