why in pigs? we were on a mixed pig hunt, and a friend took a wildebeast

Started Drunken Wildebeast BBQ .. no ,seriously .. 8# chunk of beast, 2 guiness, 2 HUGE fuji apples, garlic, bay, sage, oreganio - all in a baking bag, going in the oven for 4 hours.. tada!

Maybe cook it low and slow for twice as long? I'll bet it would tender up then. Sounds real good anyway.

Soaked mine(Wildebeest-I was on that hunt too) in apple juice with freshly cracked black pepper corns, cloves and smashed garlic for 24hrs. Put chunks in a wire rack and grilled over a pecanwood fire. It came out tender and FANTASTIC!
