What are current prices for a desert sheep hunt?

$60-70K for Texas or Mexico. Probably some higher in some places in Mexico. Those are the only two places that I know that you can buy a permit. Obviously I am not including the various auctions.

You can get a tag from Ted Turner for the Almendaris ranch about 30 miles from my house.

There are some Indian reservations in New Mexico and Arizona that have tags, not sure if they sell them outside the auctions.

There are some ranchers in Texas and maybe Colorado that have tags. I have never seen any offered, so again not sure how that one works.

I'm unaware of any wild sheep in South America but the other posters ^^above are about right for where they're available and the approximate cost.
