Anybody got any favorite/good spam (klik and Kam for the canadians)recipes?

here's a dip recipe:

Hot Spam Dip

1 can (12oz.) Spam, cut into very small cubes
1 cup mayonnaise
1 clove garlic, minced
1 can (14 oz.) artichokes, drained and chopped
1 cup grated Parmesan cheese
� cup bacon bits
� cup chopped sun dried tomatoes
� cup each red & green bell pepper, chopped small

Mix all ingredients. (can be done ahead of time and refrigerated.) Spoon into
microwavable dish. Garnish top with � cup grated cheddar cheese. Microwave on
high for 8-10 minutes, or until bubbly hot. Serve hot… also good cold.

Serve with crackers. Makes 4 cups.

this is the 2002 WI state fair winning recipe

Cashew SPAM Sandwich Roll

Ingredients:
2 (12-ounce) cans SPAM Oven� Roasted Turkey, chopped (3 cups)
1/2 cup chopped cashews
1/2 cup finely chopped celery
3/4 cup mayonnaise
1/3 cup pickle relish, drained
2 tablespoons chopped pimento
1/4 teaspoon salt
1 (1-1/2 pound) unsliced sandwich bread
4 (3-ounce) packages cream cheese
1/3 cup milk

Cooking Directions:
In a large bowl, combine SPAM, cashews, celery, mayonnaise, relish, pimento and salt. Slice bread into 5 horizontal slices; trim crusts. Spread a generous 1/2-cup of filling evenly over each slice. Starting at narrow end of 1 slice roll up jellyroll fashion. Place roll at one end of another slice, continue rolling, putting ends together and enlarging the pinwheel until all slices are used. Place roll cut side down on a plate. In a small bowl, beat cream cheese and milk until smooth. Frost sides and top of roll. Refrigerate 15-30 minutes. May be prepared the day before. Garnish as desired.

Normally I think of spam as a really disgusting canned meat product, but I have to admit that these recipes sound pretty tasty.
