Hawaiian Roll Blackberry Sliders

Ingredients

- 2 lbs ground 80/20 sirloin beef (or wild game 80/20 w/pork fat)
- 1/2 lb thick cut bacon
- 1 jar of blackberry jam
- 2 packages Hawaiian rolls
- Seasoning salt
- Worcestershire Sauce
- Swiss Cheese Slices (or cheese of choice)
- 2 cups Portobella mushroom slices
- 1 cup sweet onion sliced
- Butter
- Extra Virgin Olive Oil
- Pepper
- Salt

Makes about six servings.


Procedure

Liberally season meat with seasoning salt and add 10 shakes of Worcestershire Sauce. Cover and refrigerate for 1 hr. minimum.

Cut bacon into 3 in. strips and fry med well. Reserve heated.

Saute onions and mushrooms in oil and butter. Season with pepper and salt. Reserve heated.

Form roll sized patties of hamburger and grill over med/high heat.

Grill or heat rolls and butter both insides.

Assemble, layering, starting with cheese, then burger, then bacon and top with onions and mushrooms. Spread a generous layer of blackberry jam on the top bun.

Serve with a lite salad and enjoy!

Reminds me of the elk and huckleberry sliders we had at Tim Love's Lonesome Dove in Fort Worth. Very nice!
