Bear and smoked duck breast terrine

Made this for a wine tasting last night. Nobody there had tried bear before. Not much left to bring home, heh, heh.

Used this recipe and just subbed the bear for the pork and smoked duck breast for the chicken. Next time instead of bacon I'll try pancetta. It was just a bit too greasy with the bacon, though maybe if I tried a good lean cut of bacon it would've been better. I'd also cut the meat up a little finer, as well.

Served with a coarse Dijon, a chipotle sauce and salsa as toppings.
