Bone out the dove breast, salt & pepper to taste, take 1/3 to 1/2 slice good bacon, wrap bacon around 1/2 breast. If you like them a little spicey place a slice of pickeled jalopeno pepper next to the breast(very good). Place wrapped breast halves on a bamboo skewers(tightly), a long skewer will hold about 12 wrapped pieces(six birds). Place on hot grill until bacon is browned, turn over and cook the same way. The exposed bacon will be well cooked, the dove breast will be pink on the inside (nice and moist). Then eat up! Hog Killer | ||
