Hey, I think I get it!! Last year, when we had our moose cut up, instead of having the stew meat ground into burger (none of us wanted stew meat), the butcher convinced us to have the larger pieces put through a tenderizer to make "Minute Steaks". It pulverized the cuts flat to about 3/8". They cooked super fast and were great for a quick lunch sandwich. Maybe that's what the Kubbe does. | ||
