Anyone have any road tested "killer" hard apple cider recipes? Living in the apple capital of the world, something I must do........thanks, r in w.

I always thought right here in NY State was the apple capital .
It's all a matter of choosing the right apples !

(Known today as the Apple Capital of the World, Wenatchee's agriculture industry came to fruition at the turn of the twentieth century, with the construction of the Highline Canal and the inauguration of the Columbia River Irrigation Project. Once irrigated, the countryside was planted with fruit trees, and Wenatchee quickly became one of the world's largest producers of apples. Today there are more than 170,000 acres of orchards ensconced in these foothills of the Cascade Mountains. Plantations range from elevations of 500 to 3,000 feet above sea level.) Cheers, r in w.

Looking through goggle listings I was disappointed in the fact that apple varieties are for the most part not mentioned .
I once read through a NYS list of apple varieties published in the 1930s . 600 were listed !! Eeker
Today that's been reduced to a very small fraction of that .Very sad as the quality of the end product is dependant greatly on the apples used. There are nurseries that sell saplings of some of the oldies so if you grow your own check that out !

There are several books out there about apple cider. Raintree Nursery in Morton, WA is a good source for the books, and many types of the Cider apple trees.
Some apple varitys simply have more sugar and differnet acids in them thus the ablitly to ferment into Hard cider.
If you take a gallon of normal cider and freeze it, the good stuff will move to the top and it will not freeze. I have then taken a spoon and sampled it. Much better than a DQ blizzard.

That's the old method of making "apple jack".....With repeated freezings, alcohol level can be raised to about 30% without distilling. Although I don't think this is legal. Eeker

Is home wine making legal?
Since 1978 the Federal Government has made home wine making legal. However, there are some limitations. A household of two adults or more can make up to 200 gallons of homemade wine annually.
