Thanks. I'm going to have to go the boiling route; don't have a smoker. What kind of seasonings?

In the water I usually some Zataran's Seafood Boil or cajun seasonings mix, then I use a commerical rub on the ribs before they go on the grill. The rub mix by McCormack is pretty good but I'm sure there are local mixes in your area. DON"T put the BBQ sauce on to soon or you will burn it. It burns very easily because of all the sugar in it and when it burns it gets bitter.

Thanks for the update. I had put a few words in asking about BBQ sauce in the earlier post but took them out. Thanks for telling me about the consequences. In a gallon of water, how much seasoning do you put in? I have some Zatarains; that's what I'll use, the Cajun stuff (I love Cajun food, especially catfish).

i just made six racks of ribs the other night. i did them on the smoker. cooked for about six hours at 225-250 degrees. quite possibly the best ribs i have ever had. smoked them on a weber charcoal smoker.
