The other day I was out in the desert, and met an old gentleman I know at his camp.

It was late afternoon, and he had a blackened pot by the fire, on which he was brewing fresh coffee.

I asked what was in the pot.

He said “Finish your coffee, and you will see. I bet you remember this”

After we finished our coffee, he got a couple of bowls.

As he took the top off the pot, I could see he had cooked black eyed pease, pieces of meat, and lots of dried red peppers.

We both had a large bowl of it, and it was absolutely delicious!

Very simple.

That sounds good. I assume the meat was goat? We use cabrito all the time here in Texas, + chiles as well.
