Need a recipe for ripe plantains

Hi all,

The grocery store had some green plantains the other day so I bought them on a whim. Well they sure got dark patches in a hurry so I need to cook them tomorrow, and I have no idea what to make with them, never cooked them before.

Anyone have a favorite dish they would like to suggest?

This is standard Cuban side dish. Let them get really, really soft, not just some black spots. Slice them at an angle, fry them up in about 1/2" of vegetable oil in a pan on medium heat.

I do venison cube steaks "palomilla" style with sweet plantains. Yum

i do the same but sprinkle them with a small amount of cinnamon first and use butter( in very small amount)

Here is one, but from green (not ripe) plantains:

Peel any way you can, and then cut across the plantain at an angle(pieces around 1" thick).

Fry both sides on a pan that has enough oil to fry the sides of the plantain pieces. When done, put the pieces on the counter on some paper towels, and then take a small plate or a cup or glass that has a large enough bottom, and press down the plantains until you have squashed them down to a little under 1/2" in thickness.

I remember long ago in a Spanish restaurant in the Big Apple where Paella was served as follows: the fried plantains where mashed down in a large bowl to form a crust (like a pie crust inside the bowl). Then the already cooked paella would be spooned into the bowl, and served.

The idea was for the customer to eat the paella along the plantain. I imagine that a lot of liquid (soup) to semi-soft dishes could be prepared with a crust of plantains like the paella above.

Anyway, plantains don't have much flavor, but taste real good when served along a good home-made chili or maybe a taco salad. It goes well with a well-seasoned stake that has some sauce of gravy. Should be an excellent side dish to complement Southern spicy foods.

Darn…now I am hungry!

A few words to Google; Venezuela platano (plantain) recipes.

I really don't care for platanos, but the Venezuelans love them.

If you have a significant case of diarrhea, go on a platano soup diet for a while. My wife raised her kids on it when they had stomach problems.

Platanos and yuca are standard Venezuelan side dishes, as popular as rice.

It's popular all over Central and South America, as well as the Caribbean Islands.

Plantain does not have much flavor, which makes it perfect when served with a flavorful meal. You can also make a tasty sauce for the plantains. The same can be said for potatoes and their lack of flavor, but if you add a sauce of gravy then they taste much better.
