I was jonesing for some Costco chicken recently, but the nearest Costco is two hours away in Lubbock, and I have let my membership expire. Then I remembered that I have a classic Ronco "Showtime" rotisserie, so I hunted up a fresh seasoning recipe, applied the rub and roasted a chicken. Not quite up to Costco standards (I didn't inject it full of saline), but still, extremely satisfying.

Have a bird marinating. Four teaspoons seems like a lot of cumin, I muttered to myself while putting it together yesterday afternoon. We shall see. I always toast cumin seed and grind it in a mortar and pestle, releasing the wonderful, smoky aroma that lasts for hours.

It sounds good to me but maybe you can add more seasoning next time? I often grill a whole chicken, no rotisserie. I don't brine, just season with a mesquite blend dry rub. Comes out fine.

Our weather has gone to bitter cold already so thoughts are moving towards getting my new smoker going soon.

It is freezing here this morning, Ann. I covered my basil with a five-gallon bucket and hope it survives -- one more night of frost expected.

The chicken I did with this Ronco spice rub mixed with a couple of tablespoons of EVOO came out great:


Spice Rub

• 1 - teaspoon paprika (try smoked if you can find it)

• 1 - teaspoon chili powder

• ½ - teaspoon cayenne pepper

• ½ - teaspoon white pepper

• ½ - teaspoon black pepper

• 1 - teaspoon onion powder

• ½ - teaspoon garlic powder

• 1 - teaspoon dried thyme

• ½ - teaspoon allspice

• 1 - teaspoon sea salt

That is not strictly true.

We have a famous Pakistani restaurant here.

Specializes in very hot grilled chicken.

We buy from there very often - in fact, we are having some tonight, by popular demand.

One day Walter, rest his soul, offered to bring dinner from there.

Amongst the guests was an English friend we call the trash compactor, as he eats anything!

Well, Walter appeared with a large serving of chicken.

It was the most awful, inedible chicken one has ever tasted!

Even our friend the trash compactor said so.

It appeared that Walter took a shortcut, and bought chicken from a different place!

Never again!

Yikes, Saeed! Not sure how anyone can ruin grilled meat but I guess there is always that one. I do know you like your red meat burnt, that's ruined to me.
