Venison Chorizo

Venison Chorizo
CHORIZO

This recipe has been tried and tested with 1 pound of ground venison, with no added fat.

3 cloves garlic (finely chopped or mashed)
3-4 sprigs cilantro (chopped) (not critical)
1 tablepoons Ground red chili powder
1 “ Sweet paprika
1/8 to 1/2 teaspoon ground cumin. Use more cumin if the ground chili powder does not contain cumin.
1/8 teaspoon ground coriander
1/2 teaspoon salt +/- (your taste)
1/8 teaspoon ground black pepper +/- (your taste)
1/2 teaspoon oregano +/- (your taste)
1/2 teaspoon ground cloves
1/2 oz. vinegar

I like my stuff a little spicy so I added about a 1/2 teaspoon of Cayenne.

Looks like a good recipe. Usually chorizo is made with white wine, you might try that instead of the vinegar.
