This is good with bear, elk or buffalo. 1-2 lbs of ground game meat 2 thin slices of onion diced small panko bread crumbs 1 egg Mix all together and lay out and press into a long rectangular shape on a piece of waxed paper (like you're going to fill a jelly roll) Filling: layer.... shredded mozzerella thick diced portabello mushrooms black or green olives (cut in half) ...on top of the meat Using the waxed paper to help you roll, roll up the loaf with the goodies inside (like a jelly roll.) Pinch off the ends well so the inside doesn't cook out and seal the seam of the roll well too(pinching the meat back together on itself.) Place into a loaf pan. Bake at 350 for 1hr & 15 mins. About 45 mins into it I drain off the accumulated juice so the meatloaf isn't mushy. The remaining cooking time will produce just the right amount of tenderness. Have a buffalo stuffed loaf in the oven right now. Smells great! Will serve with mashed potatoes and fresh asparagus! Taxidermist/Rugmaker | ||

I loved it! I did make some minor changes though. As I used two pounds of ground bison, I used 2 eggs. I was unable to find any portabello mushrooms or panko bread crumbs, so I used regular of each. And, instead of just plain olives, I used green olives stuffed with Jalapeños. Your recipe will now be our standard. Thanks.
