Texas Pinto Beans

2 lbs. Dried Pinto Beans
2 lbs. Dried Red Beans
2 Sweet Onions
12 ½ “ x ½ “ Cubes of Salt Pork
1 Bottle of Circle S Jalapeno Wine (Can Substitute Jalapeno Juice but much less)
4 T Chili Powder
2 T Cilantro

Mix beans evenly and then soak in water overnight making sure to put in twice as much water as beans. Next morning drain and rinse beans until water is clear. Peel and quarter onions. After quartering, separate the pieces and throw into the pot with the beans. Add pork, wine, chili powder & cilantro. Cover and bring to a light boil until beans are soft. If you unable to use wine substitute with juice from a jar of pickled jalapenos. This should take several hours. Makes a lot to freeze and give away. We like mason jars, but don’t fill to the top.
