Charlie, the recipe is nicely balanced, with just the right amount of Zatarain's for all palates. Tried Lowe's first for the Zatarain's and all they had was the dry mix, but Albertson's had the liquid.

Probably would. In Puerto Nuevo ( just south of Tijuana), they are known for lobster tails deep fried in lard- and it is absolutely delicious

I'm reasonably sure it would, you would have to adjust the cooking/stirring time to fit the tail sizes. We've cooked whole lobsters ala Cajun boil many times. Yummy.

The finest restaurant seafood available is fresh lobster on the NE Coast. Too damn bad it is so damn far from God's Country/Texas.

I think you'll like it. Ask Kensco, he's had it, after haunting my wife to see how she made it. I mean, I think the man has reading problems, if you can't follow those directions, you probably need someone to tie your shoelaces.

I'm going to try that recipe over the firebox on my smoker, in my discada comal. It should be easy, but like a whole hog, it's all in the gut feel and timing. There won't be any control of the cooking temperature. The shrimp will get done in a hurry. (I figure to do this at our next party, after all the meat has come off the smoker, and right before eating.)

I'm not sure whether Gato really knows how to cook this shrimp dish. He disappeared as soon as the butter hit the pan and we never saw him again until it was time to chow down....Just sayin'..........talks a good game though.

The chow-down part of the feast was important and did require Gato's supervision. Think crawfish boil.

1. Protect the table
2. Up-end the goodies in a pile
3. Start grabbing

I never realized how sharp Gato's elbows were until then.

I plan to have a walk-around this morning to double-check whether my comal/smoker combination will work as planned. It's 28 degrees right now and my wife is still sleeping. As soon as she gets up and helps me with my shoelaces, I'll check it out.
