This is a recipe I got from a book on the Shakers. Tried it last night and it was outstanding. I served it with some grilled German sausage, some beer based Polish mustard and a Yeungling Black and Tan. I'll be making this a lot since it turned out so well. Ingredients: 1 9 in unbaked pie shell 3-4 large leeks 2 Tbs. butter 1 Carton (16oz) cottage cheese 2 eggs, beaten 2 cups mashed potatoes seasoned to taste 1/2 cup sour cream 1 tsp. salt 1/4 cup Parmesan cheese Paprika Wash leeks, cut off tops, leaving 2 inches of the leaves. Trim off roots and cut leeks into thin rings. Saute in butter until tender and set aside. In another bowl blend cottage cheese and eggs. Stir in potatoes, sour cream and salt. Fold in leeks. O Pour into pie shell. Sprinkle Parmesan cheese over top and dash with paprika. Bake at 425 degrees for 40-45 min. Makes 2 pies The recipe doesn't call for it but some chopped up bacon would add another level to it. | ||
