6 T Butter
2 C Diced Cooked Potatoes
½ C Diced Onion
½ C Diced Green or Red Pepper
½ lb. Hot Italian Sausage, Cooked and Crumbled
8 Large Eggs, Beaten at room temperature
15 oz. Ricotta Cheese
¾ lb. Mozzarella or Italian Fontina Cheese, Grated
½ t Kosher Salt
½ t Black Pepper
1 ½ t Italian Seasoning or ¼ C Minced Fresh Basil
¼ C Parmesan Cheese, + More for Serving
1/3 C Flour
¾ t Baking Powder

Melt butter in a 10-inch ovenproof skillet over medium heat. Remove 4 T of the butter and set aside. Add the potatoes, onions and peppers. Sauté for about 5 minutes or until the potatoes are lightly browned. Add the sausage and cook until just warm. In a large bowl, combine the eggs, ricotta cheese, mozzarella cheese, salt, pepper, Italian seasoning, melted butter and ¼ C Parmesan cheese. Sprinkle the flour and baking powder over the egg mixture and stir gently. Pour this over the potatoes in the skillet. Place in the oven and bake for 50 – 60 minutes at 350 degrees or until puffed and browned. Serve hot or at room temperature. I like it hot, but the choice is yours.
