Caverelli---Fairly recently I was converted to making jerky out of ground meat vs slicing it as I had previously done. It turns out better in all respects as far as I'm concerned. I have used deer and I have used beef and have eaten some my son in law made out of antelope and I defy anyone to be able to tell the difference. In my opinion if you can make antelope taste good,you have done something. I use commercially prepared spices---jerky mix I buy at Wal Mart made by Nesco. I grind the meat(I only have a hand grinder)and mix in the packets of the commercial mix. Use a jerky gun which is nothing more than a caulking gun,and can run a continuous bead on my dehydrator tray and dehydrate it. I'd think it would work on ducks. | ||
