Oh Yeah have this at room temperature and prepare it while cooking the eggplant +++++++++++++++++++++++ Cucumber Onion and Tomato Salad Pick/purchase one large fresh cumber. Peel quarter lengthwise and slice into slices 1/4 thick. Place in a bowl and thinly slice (116-1/8" X 3/4-1" long) a good sweet onion Vidalia, Texas Sweet, or Walla Walla (about 1/4 of the cucumbers volume) Toss well in a bowl. Add fresh RIPE tomato cut into 1/4" squares (about 1/3- 1/2 of the volume of cucumber and onion mixture. JUST before serving drizzle lightly (VERY LIGHTLY) with a ZESTY Italian Dressing (we have found Kroger store brand to be best). Toss lightly and allow eaters to salt and pepper to taste. I use English cucumbers (don't have to peel) and add yellow or red peppers. Add some feta cheese, some fresh ground black pepper and a drizzle of olive oil, and you have a nice salad with any grilled meat or fish. Chopped in big pieces is better. | |||

Hello cooks and gormands (sp?) (lovers of good food): Here in Alabama we make about the same salad. ( Can it be called a salad if it does not have lettuce in it???)(or at least poke salad???) We chop the cucumber small, thinly slice the onion and dice the tomato. We dress the sallad with wind or cider vinigar, several teaspoons of sugar to soften the vinigar tast, but not so much as to kill the crisp sharp tast of the vinigar, and put ice cubes on top tho crisp up the cucumbers. Let it set up for a while to get the flavor through out, but eat fairly quickly to keep the dressing from getting too weak, but you can put some more vinigar and sugar on it. It is great with pork tenders, greens, snap beans and nanner puding. Another good one is a wilted salad: fry up at least a pound of god bancon in a iron skillet, reserve the bacon (don't let the kids or dogs eat it because you put it back on later) mix vinigar sugar salt and pepper in, stir and pour while hot over spinich or baby lettuce, crumble the bacon you have left on top. This is good for dinner (lunch for yankees) on a hot day in the feild with pork chops, chicken fried steak, mashed taters, gravey, rattelsnake or blue lake beans sliced tomato, yellow spanish onions, okra, squash, hoop cheese and sweet iced tea. With a choice of chocklet or angel food cake to finish up with. A short nap is usually called for. Some old timers like hot coffee with dinner, because it keeps you cooler to drink something hot in the middle of the day. save the Cokes and other belly washes for quitting time. (We say from can see to can't see time, or dark thirty.) You generaly have the heavy meal at night (supper) if you have a dinner as above at around noon. Don't get me started on breakfast. But if you are going hunting, or working out in the cold, you are fed a heavy meal, not nearly so light as the dinner above, so that you will have something to stick to your ribbs. It probably includes Oatmeal, grits, eggs, ham bacon and sauage, biscuts, fried tomato, fried bananna fried apples, 8 kinds of jelly and peaerves coffee, pancakes(flour or corn meal) and often freashly fried chicken. You would set off with a hot sweet potato in your pocket to keep your hands warm and to eat mid-morning. There was generally buttermilk and corn bread with the with freash churned butter and whole mlk for the kids with the cream so thick you ad to stir it up it drink it. Thats one reason I do not drink milk now. It just ain't the same. Then we get to the real meals like for dinner on the ground, or a wake or seting up, or a building party, or a wedding, or relitives visiting or the preacher comming, or a new baby. I need my nap now, I will tell you about catfish stew, bar-b-qu hash, brunswick stew fish fries oyster bakes and dove shoots some other time.
