Our favorite way to eat bear is as a filler for toquitos. Take a couple pounds of ground bear, and season with paprika, garlic, turmeric and a dash of salt and pepper. Steam corn tortillas to soften them. Spread a heaping tablespoon of meat on one edge of the tortilla and roll up. Deep fry until well browned. Serve with salsa and sour cream. We've cooked up at least 50 pounds worth, and I can eat nearly a dozen at a sitting. We use ground bear pretty much interchangable with beef for pasta sauce, beef stroganof etc. So long as the meat was taken care of, and fat trimmed off, it doesn't have much "game" taste. Bear can actually be rather lean due to the fat not marbling the meat. I would avoid jerky, as bear can have trichonosis, so cook thoroughly. | |||
