1 lb. Spicy Italian Sausage (I use wild hog)
10 oz. Cheddar Cheese, Grated (Do not use pre-grated cheese, it won’t mix as well)
2 ½ C Bisquick
Crushed Red Pepper to Taste

Set meat out to warm a little (this keeps your hands from freezing while kneading), meanwhile grate cheese. Mix all three ingredients well. We start in a large mixing bowl and then dump the large mass out onto the counter to finish. Expect to get messy (recommend removing any rings). Keep folding mixture into itself. This should take 10-20 minutes. Mixture should go from looking like multiple ingredients to one uniform mass. Roll into balls and place into a greased pan not touching. Can layer using foil greased on both sides. Cover with foil and place into freezer until balls are frozen. Remove and place into large freezer bag(s).

When ready to serve preheat oven 350 degrees. Pull straight out of the freezer (do not thaw) and place onto a non-stick pan with a lip (grease does come out). Bake for 20 mins.

Makes about 45 large balls or 60 medium balls. We prepare 4-5 times this at the beginning of the holiday season and freeze so the are ready to go on short notice. Guests love them! Great for breakfast, appetizer or pot luck.
