Moose roasted on Cedar Plank

I did a couple of moose roasts last night.
Mixed a marinade of paprika, gsrlic. salt, roasted red peppers, brown sugar, olive oil. Marinated
8 hrs but longer would be fine.
Had a cedar plank soaked for an hour.
Put roast on the plank and wrapped the whole thing in foil. Put in the oven at 350 over a drip pan and cooked for 1 hr 15 minutes. Roast had a wonderful flavour and very moist.
Next time I am going to try a maple or alder plank.

Did you wrap the roast and set it on the plank or set it on the plank and cover the roast with foil?

I put the roasts on the plank then wrapped the foil around the plank. there was still some of the plank exposed underneath as the foil would not go all around. But all was sealed pretty well.
