The Dall sheep here in Alaska is the best table fare on the continent in my opinion. A much better flavor than domestic lamb or mutton. You will want to recover every single scrap that you can.

I'm not sure about Bighorn or other sheep, but if anything like their Dall cousins, should be excellent.
