I've never used a liquid marinade for making jerky as I have mainly made in the bush while camped for long periods or at home and want to get stuck into it asap. For best results cut your deer,roo,goat meat or what ever into very thin strips and make sure you remove all fat now this can be done with freshly killed game no need to hang to get the meat to 'set'. I mix the following dry spices: we will work on about a kg (2pound) meat. handfull: crushed peppercorns chilli powder paprica half handfull sugar salt And any other spices you may like hotter the better.. mix up in a bowl and add the meat strips and mix around and hang in branches in a tree in the shade (warmish/hot day) or on a fence wire. leave until dry this will depend on weather conditions ...flies and bugs won't go near it due to the chilli...great with a beer around a camp fire...Les | ||
