Took my non trophy sheep a few days back and this was what I made for my first attempt at cooking sheep.It turned out pretty well. 1 lb ground sheep 1 lb ground pork 1 onion finely chopped 2 cloves crushed garlic 1/2 tsp ground coriander 1/2 tsp ground oregano 1 tsp salt 1 tsp pepper Combine all of the above and mix well. Shape into flattened sausage shapes about 1" thick Broil the sausage and baste with 2 tbsp lemon juice with oil. Place into pita pockets. SAUCE 2 tbsp chopped parsley 4 tbsp lemon juice 3 tomatoes seeded and chopped 1 onion chopped 1 tsp oregano Spread sauce over the sausage in the pita and then top off with a dollop of sour cream. This recipe is based on a beef sausage recipe that I found searching a sausage making website. Works great on game like sheep and antelope. [ 10-31-2003, 05:46: Message edited by: turnerhunter ] | ||
