Bill/OregonBaked bean casserole
In a vegetable-sprayed casserole dish mix up:
1 22-ounce can Bush's grilling beans
1 20-ounce can La Costena whole black beans
4 strips of bacon, diced
1 yellow onion, chopped,
1 green pepper, chopped
1 can Rotel
1 or more finely diced jalapeños to desired heat level, or substitute smoked, peeled and diced Hatch green chiles to desired heat level
1/2 cup ketchup
1 TBSP chili powder
1 dollop of brown sugar or a good squirt of molasses. Omit if you prefer less sweet.
Bake this in a 325-degree oven for 3-4 hours, stirring occasionally. You can add a little water or beer (I like to cook with Guinness Stout) if it seems to be getting too dry.
I like this as a side for barbecued ribs or pulled pork, along with home-made cole slaw.
Have been tempted to substitute a can of butter beans for whole black beans.
