Cook till tender alond with salt and pepper, cool in fridge overnight, reserving ~2.5c of the broth. Add feet, broth, 2/3c vinegar, 1 sweet onion sliced/diced, 1 clove garlic whole, 2 cloves star anise,1t crushed (not ground) red peppercorns, tiny pinch ground cloves, cayenne, sugar. Shake it all up and leave it for a couple of weeks. If you like, add a bit of horseradish and/or mustard seed for a spicy version. | |||
