I’ve made Canadian bacon before. This is my first effort making side bacon. Turned out very well. I cut some thick slices and grilled it on the bbq for lunch today. Excellent!!! Had it with a wild leek and egg salad that my gf made.

A couple things. I didn’t refrigerate. Bacon has been around long before refrigeration and it’s been cool enough the last couple of weeks that I just put the crock in my garage to stay cool.

After 14 days it had a solid layer of mould across the top that scooped off easily. The meat, being completely submerged, was unaffected.

I do a pork bellie ever so often.
close to your recipe.
I keep some of the fat pieces for seasoning for the beans. boiled or baked it always lends to an excellent flavor.

Yep,they were smoking hams + sausages before refrigeration as well.

Man, that looks good, and so do those recipes. If I can source a pork belly or two, I'll try this. I have one of those smoke tubes and run Traeger pellets in it.

Looks good to me! The Italians were good at making pork delicacies..I like the many kinds of Salmi, Prosecutto etc..but I buy mine at the grocery store!!

I have posted here in the past about this Jewish Deli in NY that served Matza Balls deep fried in bacon drippings.Started out as a joke but it caught on. As to that.all the jews knew it was a joke;only the goyim were offended.Sign of the times as always. 'Oy vey,are we going to eat here Jacob?'' Why not not,lots of open tables.'........BTW,It's really good.If you can't find it,pull it up from past issuses of NPR.Worth the time.

We have a BBQ outfit here called Smokey Mo's that serves a loaded baked potato (sour cream,chives,cheese,etc.) topped with chopped briskit that is to die for.

Truly,if you're ever down here,check out Smokey Mo's loaded baked potatoes.They are a real treat.My mother is still living + I try to see her at least once a week + when I do I bring her one of Mo's potatoes + she will make 3 meals out of it.
